长在深水中的一种大米，人称“鸡头米”,每年九月初开始面市，到了中秋时节，也到了味道最好的时候。它既难种又难剥，可谓"粒粒皆辛苦"，所以近年来卖的比较贵了，80元一斤确实不便宜，不过刚采下来的新鲜鸡头米，颗粒浑圆饱满，滋味远胜于干品，做成桂花鸡头米甜汤最为简单美味。往煮开的水里投一把鸡头米进去，加块冰糖，看它们翻滚上若干分钟，熄火，撒一把糖桂花，呼吸下炉灶上升腾起的香甜空气，就可以开动了，入口香甜弹糯，鸡头米软糯，鲜百合爽脆，配上芳香的桂花，是最适合秋天的糖水呢。

鸡头米，又称为芡实，是一种春种秋熟的水生作物，被认为是“水八仙”之一，因其营养丰富、味道鲜美，被人们誉为“水中人参”，其味甘，涩，性平，归脾，肾经，有益骨固精，补脾止泻，除湿止带，对遗精滑精，遗尿尿频，脾虚久泻，白浊，带下都有辅助疗效，鸡头米还被誉为水中人参，古药书记载，婴儿食之不老，老人食之延年，可见，评价之高。

【材料】：新鲜鸡头米 20克，新鲜百合 10克，糖桂花适量、冰糖适量

【做法】：1、鸡头米外壳很硬，有专用的工具，套在两手的大拇指上，刻开那层硬壳，才能剥出来里面白色的仁，最方便就是买剥好的鸡头米；

2、剥好的鸡头米用水浸泡一会儿；

3、把鲜百合剥开，冲洗干净；

4、锅内放入适量水煮开，水开后倒入鸡头米；

5、放入鲜百合煮5分钟；

6、倒入冰糖待融化即可；

煮好后盛入碗中晾凉，再淋上一勺桂花蜜，桂花飘香简单易学的秋日甜汤就做好啦！
